GREEK POTATOES RECIPE INGREDIENTS
  • 6 med. potatoes, cubed
  • 1/2 c. fresh lemon juice (about 2 1/2 lemons)
  • 1/3 c. vegetable oil
  • 1 tbsp. olive oil
  • 2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 1/2 tsp. dried oregano
  • 2 garlic cloves, pressed
  • 3 c. hot water
  • Chopped fresh parsley
GREEK POTATOES RECIPE INSTRUCTIONS
Toss together the potatoes, lemon juice, oils, spices and garlic in a deep flat pan about 8 x 12 inches. Add the water. Bake uncovered for about 45 to 60 minutes at 475 degrees. Stir every 20 minutes adding more water if necessary to prevent sticking.

Be very careful not to burn the potatoes during the last 20 minutes. During the final 20 minutes allow the water to evaporate until only the oil is left. Garnish with fresh parsley and serve. 100% cholesterol free.

Skin chicken pieces and season with salt and pepper on all sides. Rub with lemon juice and sprinkle lots of oregano. Peel potatoes, quarter, and season the same. Layer in roaster, put minced garlic over top, add 1/2 cup water and bake at 350 degrees for 1 1/2 hours. Add more water if it boils away.

Greek Potatoes Recipe Ingredients

* 8 large potatoes, peeled, cut into large wedges (about 6-7 wedges per potato)
* 4 garlic cloves, minced (more garlic is a good thing, less garlic is a no-no for this recipe)
* 1/2 cup olive oil
* 1 cup water
* 1 tablespoon oregano (get the Mediterranean, it's the best!)
* 1-1 1/2 lemon, juice of
* sea salt
* fresh coarse ground black pepper

Greek Potatoes Recipe Instructions

1.Preheat oven to 440°F A reviewer has suggested spraying the baking pan with Pam - that sounds like a great idea!
2.Put all the ingredients into a baking pan large enough to hold them.
3.Season generously with sea salt and black pepper.
4. Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.
5.The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.
6.Bake for 40 minutes.
7.When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
8.Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.
9.This will take about another 40 minutes.

  • 3 lbs. sm. red potatoes, halved and sliced crosswise 1/4 inch thick
  • 1/2 c. Kalamata olives, cut into slivers
  • 2 unpeeled garlic cloves
  • 1 tsp. oregano
  • 2 tbsp. red wine vinegar
  • 1/2 c. olive oil
  • 1/2 lb. crumbled feta
  • 1/2 c. finely chopped parsley
  • Freshly ground pepper to taste

In steamer (set over boiling water), steam potatoes in batches, covered, 6-8 minutes, or until tender, and, in large bowl, combine with olives. Boil garlic for 5 minutes and peel it. Puree garlic in blender with oregano, vinegar, and oil. Add feta and blend dressing until it is combined well. Toss potato mixture with the dressing, parsley and pepper. Add salt to taste. Serves 6-8.

  • 8 cups, prewashed romaine lettuce leaves
  • 1 (6 oz jar) pitted kalamata olives
  • 4 Roma tomatoes
  • 2 Kirby cucumbers
  • 1 small red onion
  • 1 pint deli-style creamy potato salad (reduced-fat)
  • 1 cup crumbled feta cheese
DRESSING:
  • 1 minced garlic clove
  • 1/4 cup red-wine vinegar
  • 1 tsp. dried oregano
  • 1/2 tsp. sugar
  • 1/2 cup olive oil

Make dressing; To a salad cruet, add garlic and all remaining dressing ingredients. Cover, shake well.
Make salad; Place lettuce in a large serving bowl. Drain olives, add to lettuce. Slice tomato into 1/4" slices, add to salad. Thinly slice cucumber and onion, add to salad. Toss well.

Drizzle dressing over salad mix. Place 1/4 cup potato salad in center of each serving plate. Top with 1 1/2 cups of salad mix.

INGREDIENTS
  • 6 to 8 large potatoes
  • 1 cup olive oil
  • 1 cup lemon juice
  • 2 cup chicken broth
  • 2 cloves garlic minced
  • 1 tsp oregano
  • salt and pepper
  • paprika

INSTRUCTIONS
Peel and quarter the potatoes and place them in a roasting pan.
Combine the remaining ingredients and pour over potatoes. Sprinkle with paprika.
